Chicken Spiedies

Today I brought back old memories of upstate New York. For most of my childhood, I lived in a small town outside of Binghamton, New York where every year we would go to the Spiedie Fest. Spiedies are a local traditional food for upstate New Yorkers made from highly marinated chucks of chicken breast and served on hoagie buns or Italian bread. Many years ago my mom clipped the festival's winning recipe from the Press and Sun Bulliten and passed that recipe down to me.... now it's my turn to pass it on to you!

Chicken Spiedies


Ingredients 
1/2 cup olive oil
1/4 cup red wine vinegar
1 teaspoon salt
1 teaspoon pepper
1 teaspoon oregano
1 teaspoon paprika
1 clove fresh garlic
1 red onion (diced)

Directions
Mix all ingredients together. Pour over 1 pound cubed chicken breast in a large ziploc baggie. Marinate in fridge at least 48 hours. Pierce chicken onto bamboo skewers which have been soaked in water (to prevent burning). Grill until just hardened, the marinade partially cooked the chicken so it won't take long at all.

Serve on hoagie buns or Italian bread.

So moist and delicious!
